A sequence, not a survey
A chef selection is composed as a deliberate progression rather than a survey of separate choices. One plate can clarify the next, or change its direction: a clean opening gives way to depth, a softer texture follows a crisp edge, and a final note lands after the table has had time to notice what came before. The aim is rhythm, not abundance for its own sake, with each arrival helping the evening read as one considered meal.
